refrigerator bran muffins
Refrigerator Bran Muffins
2 cups boiling water
4 cups Fiber 1 cereal
5 cups flour
1 tsp. salt
5 tsp. baking soda
1 cup salad oil
2 cups sugar
4 eggs, beaten
1 quart buttermilk
2 cups All Bran Flakes
Pour boiling water over Fiber 1 cereal. Sift dry ingredients together. Cream oil and sugar; add eggs, hot Fiber 1 mixture, dry ingredients, and buttermilk. Add the 2 cups bran flakes cereal. Mix just enough to combine. Bake in greased and floured muffin tins or line with cupcake papers at 400 degrees for 15-20 minutes. You can also just toss the mixture into a microwave-safe container and microwave the mix for a minute or two. Makes 6 dozen muffins. Batter may be stored in covered container in refrigerator up to 6 weeks. Bake any amount as desired.

Southwest Sausage Bake
When we got married Jefferson and I decided we wanted to start a tradition of having a nice Christmas breakfast. Nice meaning not bagels, cereal, or pop tarts! This is our favorite thing to make for breakfast on Christmas morning. You put it together the day before so then all you have to do in the morning is toss it in the oven!
6 flour tortillas (10 inches), cut into ½ inch strips
4 cans green chilies, drained
1 pound pork sausage, cooked and drained
2 cups shredded Monterey Jack Cheese
10 eggs
½ cup milk
½ teaspoon each…salt, garlic salt, onion salt, pepper, and ground cumin,
paprika
2 medium tomatoes, sliced
Sour Cream and salsa
In a greased 13x9x2 inch baking dish, layer half the tortilla strips, chilies, sausage and cheese. Repeat layers. In a bowl, beat the eggs, milk and seasonings; pour over cheese. Sprinkle with paprika. Cover and refrigerate overnight
Remove from refrigerator 30 minutes before baking. Bake, uncovered at 350 for 50 minutes. Arrange tomato slices over the top. Bake 10-15 minutes longer or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Serve with sour cream and salsa.

Cinnamon Roll Pancakes

1 cup powdered sugar
1/4 cup butter, melted
dash salt
1 TBS maple syrup (I added a little more)
1/4 cups milk, more if needed

Hootenanny Pancakes and Coconut Syrup
6 eggs
1 c. flour
1 c. milk
1/2 t. salt
1/2 c. butter
beat together eggs, flour, salt and milk for 5 minutes. (it really is important to do it for at least 5 min.) I just put it all in the blender...while it is blending heat your 1/2 c. butter in 9x13 pyrex dish in oven at 425 until melted. Then pour mixture into the pyrex with the melted butter. Bake at 425 for 20 min. Pancakes will grow up side of pan and sometimes make mountains in the middle. Top with fresh strawberry's or your favorite fruit.
Coconut Syrup
This is our favorite and I don't even like coconut stuff not even the syrup you can buy in Hawaii. It goes good with any fresh fruit and we love it on our crepes too. I can't eat my hootenanny pancakes without it.
1/2 c. butter
1/2 c. buttermilk
1 c. sugar
1/2 t. soda
boil these ingredients in pan for a few minutes until everything is melted. then add 1 tsp. coconut extract. (i think you find it by like the food coloring, its just in a little brown bottle amongst other flavorings.)
